Mick’s Damper Recipe

3 cups gluten-free
self-raising flour
Pinch of salt
Water

Place the gluten-free self-raising flour and salt into a bowl then combine well with a butter knife.

Slowly start to add enough water to form a dough and combine with the butter knife until the mixture begins to form a dough.

Gluten-free damper batter is better a bit wet, unlike a regular damper.

This is the most important step as you don’t want to knead it, you just want to leave it as it is.

Using your hands, cup it and slowly work the dough until you get a nice round damper shape.

Place into a lightly floured preheated camp oven and cook for about 30 minutes or until the damper sounds hollow when tapped.
